Ground Turkey and veggies (absolutely delicious!)
Ground turkey and veggies is so easy to make and is a wonderful option to food prep for the week. This flavorful combo is a fan favorite in my household! Get your protein, complex carbs (the good stuff), fiber and nutrients from this amazing dish. Feel free to double, or even triple, recipe if you are looking to feed more people or treat as food prep for the week
Ingredients:
One package of ground turkey
2 zucchini
2 red bell pepper
1 Large sweet onion
3-4 Garlic cloves
Apple cider vinegar (this ingredient is super important! It will tie dish together)
Salt & pepper
Olive oil
Directions:
Start with rinsing and chopping vegetables so everything is ready when you need it. Cut and discard ends of zucchini, then cut in half length wise twice so you have 4 equal long pieces. Cut cross wise into medium chunks (about an inch or so thick). Place in a bowl or corner of cutting board to keep separate from bell pepper and onion. Carefully cut your bell peppers in half and discard ribs and seeds, then medium dice. Cut your onion in half and discard the outer skin, then medium dice. Roughly chop your garlic.
Now that your veggies are prepped, place a nonstick pan on at medium-high heat. Add a drizzle of olive oil, enough to thinly coat the bottom of the pan. Once pan is nice and hot, add zucchini chunks in an even layer and add a little salt and pepper. Do not stir for at least 3-4 minutes, or until bottoms are browned. shake pan or stir (just enough to flip most of the zucchini), then add your chopped bell pepper and onion. Fold in contents until roughly mixed, then let cook with out stirring for ~3 minutes. Fold contents once more and cook for another 2-3 minutes, or until veggies are slightly softened. Add half of your chopped garlic and a little salt and pepper, then fold in. You want to make sure veggies still hold their shape and aren’t mushy. You ideally want them a little crunchy still so you don’t cook off nutrients. Now for the ingredient that will tie dish together! Lower heat and add 1 tablespoon of apple cider vinegar. Fold in and taste. Add 1/2 tablespoon more if there’s not enough. Repeat to taste. Remember, you can always add more, but can’t take away. So be sure to taste as you go!
Pour veggie contents into a bowl on the side. If you plan to eat right away, loosely cover with tin foil to keep warm. Wipe pan out, drizzle with olive oil, and put heat on medium high. Add your ground turkey with a little salt and pepper. Use spatula to cut meat up as it cooks into a rough crumble. Add the rest of the chopped garlic towards the end.
I like to use a bowl for serving so all the yummy juices can mingle together. Place your veggies in the bowl first (feel free to give yourself a nice hearty serving!) then cover with some of the crumble cooked turkey. You should have a rough ratio of 3 parts veggies to one part turkey.
